Cream Of Broccoli With Poached Egg

The cream of broccoli is a dish with a lot of substance and, also, very good flavor. If we want to prepare a starter for lunch or a nutritious dinner, without a doubt the following recipes will help us to get it the first time. As for the possible companions, these will be completely at our choice.

Broccoli cream with poached egg

Ingredients (for 4 people)

  • Water
  • Olive oil
  • 1 leek
  • 3 garlic cloves
  • 1 cup of blue cheese (135 g)
  • 4 small carrots
  • 1 large broccoli
  • 2 medium onions
  • 1 or 2 sticks of celery
  • 1 glass of evaporated milk (200 ml)
  • 4 poached eggs (1 per person)
  • 1 tray of bacon (120 g)
  • Optional: freshly ground pepper

Preparation

  1. Peel and chop the onion into small cubes, and reserve.
  2. Apart, peel and cut the carrots into thin slices and the leek into rings.
  3. We put the water to boil in a pot over medium heat. Before it reaches the boiling point, we add the peeled garlic.
  4. When the pot begins to give off a garlic aroma, add the leek and carrot.
  5. We place a frying pan to heat over medium heat, with a drizzle of olive oil.
  6. After about 4 or 5 minutes of cooking, add the celery to the pot and let everything cook for approximately 15 minutes.
  7. Season the contents of the pot to taste.
  8. Meanwhile, we proceed to poach the onion in the pan.
  9. Cut the broccoli into small pieces and steam it.
  10. We pour the broccoli broth over the pot with vegetables and add the milk and blue cheese. We constantly stir to integrate the ingredients well and turn off the heat.
  11. We add the cooked broccoli to the mixture and process everything with the help of the hand mixer, at slow speed.
  12. In addition, we prepare the poached eggs according to the method that is easiest for us and reserve.
  13. Before serving, we cut the bacon into small pieces and sauté it for a couple of minutes in the pan where we previously poached the onions. We add the poached eggs and that’s it!

Vegan broccoli cream

Ingredients (for 2 people)

  • A pinch of sea salt
  • 1 large broccoli
  • 2 large onions
  • 1 medium potato
  • 2 cups of water (500 ml)
  • 1 tablespoon of olive oil (15 ml)
  • Optional: black pepper

Preparation

  1. First, we cut the broccoli into more or less small pieces and put it to steam. Once they are al dente, we reserve.
  2. Preheat a casserole with the tablespoon of olive oil, over medium heat.
  3. Peel, wash and chop the potato into thin slices or thinly diced, as we prefer.
  4. Apart, we cut the onion into small cubes.
  5. We take the onion and the potato to the casserole. We stir constantly while they cook.
  6. When the onion has browned, we add the broccoli pieces to the casserole and proceed to season everything.
  7. We pour the water into the casserole and make sure that all the ingredients are well covered. Then, cover and let everything cook for 20 minutes, over medium heat.
  8. Once this time has passed, we turn off the heat and pour the resulting cream into a bowl to process it in the blender and thus remove all the lumps.
  9. Serve instantly with a little bread or a couple of tablespoons of grated tofu.

Cream of broccoli with pumpkin seeds

Delicious broccoli and pumpkin cream

Ingredients (for 4 people)

  • Vegetable oil
  • 1 clove of fresh garlic
  • 3 stalks of celery
  • 1 large broccoli
  • 2 tablespoons of onion (30 g)
  • 1 glass of almond drink (200 ml)
  • Seasonings: salt, black pepper

Preparation

  1. As in the previous recipe, we take the broccoli and cut it into small pieces to be able to steam them. Once they are al dente, we reserve.
  2. We remove the leaves from the celery stalks and steam them until they are moderately soft.
  3. Apart, we peel and cut the onion into small cubes.
  4. Preheat a saucepan over medium heat, with a little vegetable oil.
  5. We place the celery and broccoli in the blender along with the other ingredients and process until obtaining a homogeneous mixture.  
  6. We take the mixture to the saucepan and let it reduce enough so that it acquires the consistency of a cream. Once it has thickened, add salt and pepper to taste, turn off the heat and serve.

Cream of broccoli is a good choice as a meal for a number of reasons. For starters, broccoli is a meaty vegetable, which, when integrated with other foods, you get dishes with enough consistency to satiate your appetite.

On the other hand, it includes a series of nutrients necessary for the body, such as: iron, phosphorus, potassium or vegetable protein, among others. Nor should we forget that broccoli is a food that provides fiber, thereby promoting good intestinal transit.
