The term sponge cake comes from the Latin ¨bis coctus¨  which literally means ¨cooked twice¨ and refers to a kind of cake that was cooked in the past and that after a time of baking it was removed from the mold and cooked again.

The cakes are often enriched with almonds, flavored with lemon peel, vanilla, liqueur, etc., and can be filled with jam or cream. Today we give you three recipes to make a yogurt and vanilla cake in three different ways.
