  • 3 cups of flour (750 g).
  • 1 pinch of salt.
  • 170 grams of butter.

  • ¾ kg of onion.
  • 400 grams of minced meat or cut with a knife.
  • Tomato puree.
  • 200 grams of raisins (optional).
  • 100 grams of olives (optional).
  • 1 spoon of sugar.
  • Salt, pepper and cumin to taste.

Preparation of the dough

  • To do this, mix the flour with the salt.
  • Then, make a hole in the middle and add the butter at room temperature, the water and the egg.
  • Mix well to form a dough, wrap in plastic wrap and then refrigerate for 40 minutes.
  • After that time, stretch the dough with a rolling pin, until it is very thin, ½ cm thick.
  • Then, using a circular mold (it can be the lid of a jar), cut the disks of the empanadas (about 12 cm in diameter).

    Preparation of the filling

    • Chop the onion well and then fry it in a frying pan with a drizzle of oil.
    • When it is transparent, add the minced meat and also the raisins.
    • Season with the cumin and also season.
    • Let the meat cook well and then add a few tablespoons of tomato puree, the sugar and, if you like, a splash of red wine.
    • Cook 20 minutes over low heat, remove and let cool.

    • First, turn the oven to 180 ° C. Arrange the empanadas on a baking sheet with a little oil so that they do not stick.
    • Brush them on top with egg, also prick a few times with the fork and bake for at least 15 minutes, until the dough is ready.
    • Then remove from the oven and wait a few minutes for them to cool down a bit and that’s it.

    Although the “original” or quintessential recipe of this country is made with meat, in some areas they can also be consumed with other fillings, such as the so-called humita empanadas, which are offered in northern Argentina.

    They are cooked with corn and also have their different versions depending on the locality where we consume them.

    • 50 grams of butter.
    • 1 onion.
    • ½ red pepper.
    • 2 tablespoons of flour.
    • 8 ears of corn.
    • 200 cc of milk.

    • Add the flour and cooked and raw corns. Pour in the milk and let it boil and thicken.
    • Season to taste. Let it cool down. You can then place cubes of mozzarella cheese or similar.
